Honey-Lemon Rhubarb Pie |

This is a summery twist on one of my favorite early summer pies.
| Ingredients: |
4 cup rhubarb (1/2" pieces)
1 1/4 c. sugar
6 Tblsp. flour
1/4 tsp. salt
2 tsp. lemon zest
1/3 cup of a very mild honey
2 Tblsp. butter
| Directions: |
Combine rhubarb, sugar, flour, salt, and lemon zest; mix thoroughly. Blend in honey and let stand for several minutes.
Put rhubarb mixture into pastry lined 9" pie pan and dot with butter. Adjust the top crust and crimp the edges, cut vents. Sprinkle with cinnamon and sugar.
Bake at 425 for 50-60 minutes.
